- 2 Steak Flanks
- Fresh Spinach
- Cheese (of your choice)
- 2 Portobella mushrooms
- Handfull of olives
- 1/2 red pepper
- Lemon butter dill sauce (optional)
- Rosemary stem
Stuff Mushrooms with breadcrumbs, cheese, olives, red pepper and garlic.
Take steak strips and wrap in a spiral with spinach, cheese and anything else you like.
Hold strips together with toothpicks.
Cover flank spirals with Lemon Butter Dill Sauce
Add rosemary for flavor. (optional)
Bake both for 20 - 30 minutes.
Optional Veggie Medley: Sliced Squash, Zucchini and onions. Sauté with a little vegetable oil in a pan until soft.
